Keto Bowl O’ Brown

I have no idea if this is of any interest to anyone, but I made it yesterday and it was delicious. It’s a savory vegetable stew that’s really tasty but still low carb. If you try it, I’d really like to hear from you to see what you think about it so please leave a comment below. It doesn’t look like much, hence the name. This recipe requires a slow cooker of some sort.

Keto Bowl O' Brown

Prep Time:
45 minutes actively working on it, then 6 hours cooking.

Ingredients:
2 green zucchini
3 celery stalks
1lb of baby Bella mushrooms
1 bunch of green onions
1 small radicchio (red cabbage)
Olive oil
Butter
Salt
Garlic
Pepper
MSG
Soy sauce
Lemon zest from tube
1 carton of Roasted vegetable broth

Prep:
Dice all vegetables and mushrooms. Put broth in crockpot on high, add a generous pinch of salt and 10 cracks of pepper, then add 5 cloves of minced garlic and about a teaspoon of the lemon zest. In a pan, combine about 3 tablespoons of butter with the mushrooms and the firmer parts of the green onions, sauté on low. Add all remains vegetables to the crockpot. While mushrooms are reducing, to the pan add salt, MSG (about 2/3 of a teaspoon or to taste), lemon zest to brighten, and a tablespoon of olive oil. Continue sautéing until mushrooms fully reduce.

Add everything from the pan to the crockpot,  give it a stir, and cover on high for about two hours. Then add lemon zest, pepper, and salt to taste. Reduce heat to low and cook for another 6 hours. Serve.
